Weeknight Quiche

One of my favorite "breakfast for dinner's" is quiche. The great thing about this dish is that you usually have ingredients on hand to make one of its many variations. My husband refuses to admit he likes quiche. I secretly think he does and just wants to keep his man card, at least that's what I tell myself to explain why he's never as excited as I am about it. Tonight, I was cooking for one and had no guilt. I started with a homemade crust (which is not nearly as fancy as it sounds.) I do use a good store bought pie crust when I need to save time. Either way, quiche is an easy comfort food that's great with a light salad or soup for a weeknight dinner at home.

SHOPPING LIST:
-5 eggs
-Canadian bacon
-mushrooms
-baby spinach
-small yellow onion
-goat cheese
-heavy whipping cream
-pie crust (store bought or homemade. See recipe for homemade crust below.)

Homemade Pie Crust Recipe
-1/3 c butter (cold)
-1 c flour (sifted)
-1/2 tsp salt
-2-3 tsp cream or milk

1. Sift flour into a food processor.
2. Chop very cold butter into small cubes. Add salt and butter to food processor. Pulse for about a minute.
3. Add one teaspoon of milk/cream at a time and continue pulsing.
4. When all liquid has been added, mix for a few seconds until the dough balls up.
5. Remove from the processor and add to a 9 inch pie pan. Press with your hands and thumbs to get as even a crust as possible. (As you can see, I don't work too hard to make mine look perfect.)
6. Using a fork, poke holes in the bottom of the crust so that it doesn't bubble up while baking.

Quiche Recipe:
1. Chop mushrooms, spinach, and onions. Set aside.
2. Take clumps of the herbed goat cheese and disperse across the pie crust. Do not spread. (I used herbed goat cheese to add more flavor. If you use a regular goat cheese, you'll want to add some fresh or dried herbs to your quiche. Thyme, savory, and chives are all good options.)
3. Beat 5 eggs and 1/2 cup of heavy cream for 1-2 minutes. I like to add salt and pepper here.
4. Add the chopped veggies to the crust.
5. Pour egg mixture evenly over the veggies, making sure it reaches the outside crust.
6. Bake at 375 degrees for 35-40 minutes.
7. Serve with tomato slices.
