We eat a lot of hummus in our house. It's a great, healthy dip, but sometimes it needs to be dressed up for a night out on the town. (AKA: I need something to take to a party and usually have these ingredients at home already.) Enter, 5 layer Greek dip...
Start with hummus. I've got a simple recipe for homemade hummus below. In a pinch, store-bought works just as well! Here's what you'll need to pick up at the store:
SHOPPING LIST:
-Hummus (homemade or store bought)
-red bell pepper
-kalamata olives
-cucumber
-feta cheese
-fresh dill
If you've never made hummus at home, it's easier than you'd think. Plus it's more cost effective than buying it premade, even if you're using organic ingredients.
Easy Hummus
-Two 15 oz. cans of chickpeas/garbanzo beans
-1/3 cup of liquid from the can of chickpeas
-2 cloves of garlic finely minced or 1/2 teaspoon of garlic powder
-Juice from 1/2 lemon
-3 tablespoons of olive or grapeseed oil
-2 tablespoons of tahini (sesame seed paste)
-1 teaspoon of salt
Directions: Mix all the ingredients in a food processor until the consistency is smooth. Yes, it's that easy.
Instructions:
1. Finely chop olive, bell pepper, cucumber, and dill.
2. Spread hummus about 1-2 inches thick in the bottom of a wide serving dish.
3. Sprinkle the vegetables evenly over the hummus.
4. Crumble feta cheese on top.
5. Sprinkle bits of dill and serve with warm pita slices. Enjoy!

ReplyDeleteLorraine, this is one recipe where you really can go with what you feel. I had about 2 cups of hummus and then chopped up a full cucumber, pepper, and handful of olives. I just sprinkled them on until the hummus was covered.
ReplyDeleteWhere can you find Tahini??? Do you have to go to a specialty store? Hummus is my new obsession! I would love to make it at home instead of having to buy store brand or just eating it at restaurants. :)
ReplyDeleteAudrey, most "finer" grocers sell it. You might find it with the nut butters or the international section. If you have a natural market in your area, give them a try. It's so worth it to make your own. Tastes fresh and much more cost effective. Good luck!
ReplyDeleteI made this last night for a Thanksgiving get together, and it was a hit! My only problem was the hummus got a little watery once I put the veggies on top of it. Do you have any suggestions for this?
ReplyDeleteKatie-Hmmm, maybe pat the veggies with a paper towel before adding them. I haven't had this issue...I know that cucumbers can be very watery. Try to add these on top perhaps. I'm glad it tasted good, sorry about the H2o:(

ReplyDeleteThanks for posting! I made this but I used the juice of two lemons, no oil, 1/2 cup of tahini and 1 Tbsp of cumin and 1/2 Tbsp of paprika. It was awesome!! So easy to make! I loved all the toppings, too!! I couldn't find dill, so I had to use basil, but it was good too. Great recipe :)
ReplyDeleteI too always use cumin in my hummus. I also add cayenne pepper and balck pepper. I don't use any oil or tahini to make it even healthier. Give it a try. I bet you won't miss it!

ReplyDeleteThis looks awesome!! I make my own hummus regularly but yours has less oil and tahini than mine requires to make it creamy. Do you rinse the beans? Or does the bean water help with the creaminess? I ask because I made a different bean dip a while back and forgot to rinse the beans and that gave them a creamier texture but I am always afraid when I am making hummus to not rinse as I do not want to ruin it! Thank you for your help. I am always looking for a way to make stuff healthier and your less oil and tahini along with the veggies would do that!
Colleen, I don't rinse the beans for the exact reason you mentioned! The bean juice does help the consistency, so you're not adding as much oil. Some may not like the taste as much though, so I guess you should do a little experimenting. Thanks for stopping by and asking!

Deletethis recipe is not greek, hummus is an arabic food. we greeks have tzatziki, skordala, and a couple of other types of dip. this recipe looks real delicious, so the next time we have a picnic or a hummus competion at our church i'm using it. haha! most of the parishers are arabic. my hubby loves hummus so i will make this for him for the days we fast without the feta. i just noticed the avocado hummus, i'm pinning that one as well. :)

ReplyDeleteI just made this dip recipe and it too die for!!! I used pre-made hummus and put fresh squeezed lemon juice, about a half lemon's worth, over the hummus to cut the "not fresh" taste.
