Savory Crab Dip

You pretty much have a winning dip when you start with lump crab and cream cheese. Artichokes, garlic, and sharp white cheddar ensure that this dip will ruin any diet within a 75 foot radius.
When Stu tried this dip, the sounds that came out of his mouth weren't exactly words. This is always a good sign. He later said, "Can I just skip the bread and eat it with a spoon?" This crab dip was our lunch on Saturday. Nutritious? Not exactly, but oh my was it satisfying.
Cooking Instructions:
1. Mince half of a yellow onion and three cloves of garlic.
2. Saute on low heat for 5 minutes. Add two stalks of finely chopped celery and saute until the onions begin to caramelize.
3. Add two cans of lump crab meat and 1/2 cup of chopped artichoke hearts. Add 1/3 cup of chopped green onion and the juice of 1/2 of a lemon. Saute for an additional 2 minutes.
4. Transfer from the pan to a mixing bowl. Add 1 package of cream cheese (softened) and 1/2 cup of mayonnaise. Stir to combine.
5. Add 1 cup of grated white cheddar cheese, sea salt, and freshly ground pepper.
6. Transfer to an oven safe dish. In a separate bowl, add 1/4 cup of breadcrumbs to 2 tablespoons of melted butter. Stir and then sprinkle on top of the crab dip.
7. Bake at 375 for 15 minutes. Serve with warm crusty bread or crackers....or eat by the spoonful.

A couple years ago, the conversation in the teachers' lounge turned to dips. We came to the consensus that we could all survive eating only dips if we had to. Out this came the idea for "Dip Day". Each made their favorite dip and brought the accessory carb to serve with it. That was our lunch; it was a great day.  So here's a question for you...

  1. Wow, this looks crazy yummy. Loved your idea of "dip day" Good idea for a pot luck app. party, Just add a few bagets and wine for an easy get together.
    My favorite dip is a big wheel of melted Brie served with bread, apple and pear slices.
