
I've shared before that I don't particularly enjoy the process of baking, mostly due to the amount of recipes I've ruined. When I cook, I rarely measure anything and throw in whatever the heck I feel like. Not so with baking. You have to follow directions precisely, which stresses me out. One exception to the baking aversion is scones; they're pretty hard to mess up. (This coming from the girl who kills any houseplant within a 20 foot radius.)
I slightly adjusted this basic scone recipe found on allrecipes.com then added 1 cup of dried cherries and 1 cup of white chocolate chips.
Baking Instructions
- Preheat oven to 400 degrees F. Lightly grease or line a baking sheet with foil.
- In a large bowl, combine 3 cups flour, 1/2 cup plus 1 tablespoon of sugar, 5 teaspoons of baking powder, and 1/2 teaspoon of salt.
- Cut in 1/2 cup (1 stick) butter. I actually used a course grater and grated cold butter into the bowl.
- Whisk one egg and 1 cup of milk in a small bowl. Stir into flour mixture until moistened.
- Stir in 1 cup of dried cherries and 1 cup of white chocolate chips.
- Turn dough out onto a floured surface, and knead briefly. Roll dough out into a 1/2 inch thick round. Cut into wedges, and place on the prepared baking sheet. (I got about 22 mini scones from this recipe, but you can probably get 12 full sized scones.)
- Bake 15 minutes or until golden brown. (You may have to cook more or less time depending on your oven. Mine were done in 13 minutes.)
Lazy describes more than just one morning. In fact, our whole weekend was pretty laid back...No nights out and a completely neglected to do list. Instead I took an epic three hour nap and did a little laundry. Exciting times, huh? What did you
