This week marks the beginning of my summer break. It's funny how you can spot teachers all over town at this time of year. They are usually grinning ear to ear, walking at a slightly slower pace than most, and glowing. (I know some say teachers have it so easy...Let me tell you that if we didn't have summer breaks, most of us would be bald from pulling our hair out and have to leave the profession well before retirement age.)
In celebration of summer, I decided to make a sorbet fizz. Pineapple, raspberries and sorbet signal the season to your taste buds. Not only is this a healthy treat, it's a great option to make for those on a gluten or dairy free diet.
If you're making them for adults only, adding a splash of your favorite gin or rum would be an added bonus.

It's almost too pretty to eat...almost.
