Easy Fall Treat: Pumpkin Yogurt Parfait

There is the magical thing in the Midwest known as frozen custard. Growing up in Texas, I had never experienced the glory of this until I came to college. Now, I can't even look at ice cream the same. Custard has set the bar high above even Blue Bell. (Yes, I said it.) A local custard shop makes a pumpkin pie custard concrete. Imagine an actual piece of pumpkin pie stirred into creamy, frozen, vanilla custard. It is pure heaven-and packed with more calories than I care to know about. Since I had my quota of custard for the month within the first week and a half, I decided that I needed a substitute.

This yogurt parfait is a healthier version of a creamy pumpkin treat (though not nearly as indulgent). No cooking required, it only took assembling. It would make a nice addition to a fall brunch or a simply a dessert that's healthy enough to eat as often as you'd like. It took only about 10 minutes to prepare. 
Ingredients:
-walnuts
-cinnamon graham crackers
-pumpkin pie filling (chilled)
-vanilla yogurt
-maple syrup


Method:
1. Crush walnuts and set aside. Crumble graham crackers to desired size and mix with crushed walnuts.
2. Mix 1 cup of yogurt and 1/2 cup of pie filling until blended. Stir in 2 tablespoons of maple syrup.
3. Layer dry mixture with yogurt mixture in a small serving dish. 
4. Finish with a sprinkle of cinnamon and walnuts on top. Serve immediately. (Makes two servings)
***Bonus Recipe*** 
Here is a spritzer that I am obsessed with lately, sparkling cold apple cider. Oh my goodness-it's delightful! Mix 5 ounces of cold pressed cider with 3 ounces of sparkling water. Easy enough, right?

Yogurt truly is a great option for a daily dessert. Honestly, I need a little something sweet each day.   3. I can't say I've ever had custard, but now that you mention it is better than Blue Bell, I have to get my hands on some and try this recipe out! It looks so delicious.

    1. OK, let me clarify...This recipe is a substitute sweet treat but doesn't even come close to frozen custard!!! If you can find a place that sells it, beware!
